Green Goddess Grilled Cheese Sandwich

Hope everyone had a great weekend! Our weekend was super relaxed. My mother-in-law was in town and we spent the weekend visiting with Grandma and watching LDS General Conference. It was a really nice weekend. I am feeling really rejuvenated. I've been extremely tired and rundown with 2 littles and with the move so it's really nice to feel that way.
Anyways, I made this wonderfully awesome sandwich Sunday afternoon and I am heading out to the store today to buy the ingredients to make it again. I was expecting awesome (I mean, how can you go wrong with goat cheese and pesto?) and it did not disappoint. Although I did forget to add the mozza. If you want a delicious, grown-up grilled cheese make this.

Green Goddess Grilled Cheese Sandwich

Ingredients:

2 slices bread 
2-3 tablespoons Pesto
2 slices mild white melty cheese like mozzarella (I didn't use any and it still turned out so yummy)
handful fresh baby spinach
¼ avocado, sliced
2 tablespoons goat cheese, crumbled
olive oil (and butter if you’re so inclined)

Directions:

Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread (2 tablespoons total, but if you’re sensitive, go light, the pesto is STRONG).
On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. Press together gently.
Heat 1 tablespoon olive oil in a frying pan over medium low heat. (If you want to use butter, add it to the oil and let it melt). Add the sandwich to the oil and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown.

Barbecue Chicken Sanwiches

I made these as well when my sister was here. She loved them. Brian wasn't hungry when we had them for dinner and he was a little peeved at my sister when he saw her eating the leftovers for lunch the next day until he found out there was enough for him to have a sandwich too. So I'd say a little fight over the leftovers equals a pretty good recipe. I always like a good barbecue sandwich. They taste good and they are super easy, and we all know how much I love easy. I have found that the easiest way to make shredded chicken is to throw it in a slow cooker with some water and shred it after 5 or so hours on low. For this recipe I just put the chicken in the slow cooker with the barbecue sauce and let it cook. When it was ready I took 2 forks and pulled the chicken apart right in the cooker. It basically fell apart after cooking for so long. I would give this recipe 4 stars. There is nothing particularly special about it but it is a yummy, hearty meal.

Barbecue Chicken Sandwiches

Ingredients:
1/2 cup shredded cooked chicken
1/4 cup shredded carrots
2 tbs barbecue sauce
2 tsp light ranch dressing
1 small whole-wheat sandwich bun
1 leaf romaine lettuce

Directions:
Combine chicken, carrots and barbecue sauce in a bowl. Spread ranch dressing on the bun. Top with the chicken micture and lettuce.
